New market imply new competences and new qualifications.
To define and open the debate with the profession, l'Ecole d'Avignon used the system of professionnal referential.

This methods assemble 3 operations :
- the task given to the operator by his employer (description of the professionnal profile as an objective),
- details of the mobilized capacity (know-how and associated knowledge) forming a global competence,
- the content, path and training system allow to acquire these competences.

Those referentials were drawn up in common in workgroups with the professionnals authorities, the nationals authorities of the heritage, representatives from professionnal training.
Some gave rise to official title (such as "Heritage decoration painter" for instance, approved as level III superior technician grade), all were adopted by the professions.
